Pumpkin Cranberry Bread

3       Cups flour

2       Tbs. Pumpkin pie spice

2        tps. Baking soda

1 1/2 tps. Salt

Combine in large bowl.

 

3       Cups sugar

1       can (15 oz.) Libby's pure Pumpkin

4       eggs

   3/4 Cup Vegetable oil

   1/2 Cup orange juice or water

Mix wet ingredients together and add to flour mixture.

Stir until just moistened.

 

Fold in 1 to 1 1/2 Cup dried cranberries

 

Spoon into two 9"x5" greased or sprayed loaf pans

 

Bake 350 degrees for 60-65 minutes or until pick comes out clean.

Cool in pans 10 minutes.

Cool completely on wire racks.
